Branjord's Brain Boost Bars

  • 1 Cup of Coconut Oil
  • 10oz bag of 60% Caco Chocolate Chips
  • 16oz jar of Natural Creamy Peanut Butter
  • 2oz bag of Chopped Walnuts
  • 2 Scoops of Vanilla Protein Powder
  • 1 TBSP of Liquid Stevia

  • 222 Calories 
  • 19 Grams of Fat
  • 13 Grams of Saturated Fat
  • 9 Grams of Carbohydrates
  • 2 Grams of Fiber
  • 6 Grams of Protein
  • Warm Coconut Oil and Chocolate Chips in a sauce pan over low-medium heat. Stir into a smooth liquid. 
  • While chocolate is warming combine Peanut Butter and Protein Powder in a mixing bowl with a spoon. Combine slowly and press down as the powder is mixed into the oil. 
  • Stir chocolate until it's smooth and add in the Stevia and Walnuts, remove from heat. 
  • Pour chocolate into the mixing bowl with peanut butter mixture. I stir it only a few times. It doesn't need to be completely mixed together.
  • Pour all into a large rectangle baking pan with wax paper on the bottom. 
  • Using a spoon I press down and spread to cover the entire pan. 
  • Place the pan in the refrigerator for 30-60 minutes or until chocolate hardness. 
  • I cut mine into 30 bars/servings
  • Store in the refrigerator.

MCT Oil which is the saturated fat in coconut oil is premium brain fuel while the nutrients in chocolate, walnuts and peanut butter also have been shown to improve brain health. These bars were my go to fuel source while I was studying for my exams.
